Ingredients:
hummus a pita bread cut in half cubed cucumber cubed tomato spinach or spring mix lettuce vinagrette of choice Directions; 1. spread the hummus on the inside of the 2. pita as generously as desired 3. put veggies inside the pita 4. when eating top with vinaigrette tips: *Use as plain a vinaigrette as possible to avoid it clashing with the hummus. *you can use guacamole instead of hummus but you may not need the vinaigrette *you can put any veggies you want I prefer tomato and cucumber to keep it simple and delicious Ingredients:
Ingredients 1/2 cup mayonnaise 1/2 lemon 1/2 peeled carrots, chopped into tiny pieces 2 medium potatoes, peeled and cut into 1'' cubes 1/4 cup cooked corn a pinch of sugar a pinch of salt and pepper a deep fryer or hot oil in a pot 1/2 cup Panko or bread crumbs Directions Boil potatoes for 15 minutes or until tender meanwhile steam carrot and corn in microwave Mix together mayonnaise, lemon, salt, sugar, and pepper then mix in veggies and potatoes You can eat as is or you can make the mixture into balls and then roll in bread crumbs generously and fry until golden brown to make tater tots. Disclaimer: Just because this has veggies does NOT make it healthy, this is very very greasey if you fry it, but it's much better for you if you don't fry it (You probably know that but :-P) also mine fell apart a little because I used flour and should have used bread crumbs and my oil wasn't hot enough.
