1/2 cup mayonnaise
1/2 peeled carrots, chopped into tiny pieces
2 medium potatoes, peeled and cut into 1'' cubes
1/4 cup cooked corn
a pinch of sugar
a pinch of salt and pepper
a deep fryer or hot oil in a pot
1/2 cup Panko or bread crumbs
Boil potatoes for 15 minutes or until tender
meanwhile steam carrot and corn in microwave
Mix together mayonnaise, lemon, salt, sugar, and pepper then mix in veggies and potatoes
You can eat as is or you can make the mixture into balls and then roll in bread crumbs generously and fry until golden brown to make tater tots.
Disclaimer: Just because this has veggies does NOT make it healthy, this is very very greasey if you fry it, but it's much better for you if you don't fry it (You probably know that but :-P) also mine fell apart a little because I used flour and should have used bread crumbs and my oil wasn't hot enough.
