Coleslaw:
1 cup vegan mayonnaise
1-2 tbsp mustard
3 tbsp vinegar (Apple cider vinegar works too)
1/4 cup sugar
1 large carrot or 2-4 small ones
1 small head of cabbage or 1/2 a big head of cabbage
salt and pepper to taste

Potato Salad:
1/4 cup of pickles or pickle relish
1 cup vegan mayonnaise
1/8-1/4 cup mustard (preference)
salt and pepper
splash of vinegar

Baked Beans:
2 cans of white beans (or soak your own)
1 cup barbecue sauce (I have a recipe somewhere on this blog ill post it again if you want)

Kebabs:
1 zucchini
1 squash
1/2 red onion
1 bell pepper
1/2 cup soy sauce or liquid aminos

Best Ever Vegan pepper poppers
1 bag sweet peppers
1/2 container of tofutti plain cream cheese
2 strips of sweet earth bacon
2 tbsp buffalo sauce
coating:
1 cup flour
almond milk until correct texture
Italian seasoning
*My coating did not turn out very good, it didn't stick well. You may need to add some egg replacer or something, give me some tips in the comments.

How to make an easy satisfying healthy meal

Hi guys, I'm here to tell you how to build a satisfying healthy meal in simple steps. When you eat low-fat vegan you don't have to cut back on calories and you should just eat until you are satisfied.
1. Pick 2 or more vegetables (you can use frozen if it's convenient)
2. Pick your starch
  • rice
  • potato
  • pasta
  • quinoa/couscous
3. Pick your protein
  • Fish
  • Tofu
  • Seitan
  • Beans
  • Tempeh
5. Flavor!!!
I reccomend just putting salt and pepper on your vegetables if your protein is going to be flavorful, or flavor everything the same way. Sometimes mixing flavors doesn't work but just experiment.
  • Tomato sauce
  • Soy sauce
  • lemon and garlic
  • Taco seasoning
  • Vegetarian gravy (non-vegetarian is mostly fat)
  • BBQ sauce
  • Italian seasoning
  • Mrs. Dash
  • Hot sauce
4. How are you going to cook it?
  • Microwave then add flavor
  • Pan fry in a little coconut oil and add flavor
  • Bake with flavor
  • Boil, drain, and flavor

My New Years Resolutions/How to be Eco-Friendly.

My new years resolutions and explanations:
1. Be more Eco-Friendly
I'm going to try to be more eco-friendly this year by basically recycling more, reusing more, and using less plastic and avoid using anything I can't recycle. I can recycle plastic grocery bags at my local grocery store but because I have reusable bags I think it's better to reduce. I also am going to start bringing my own cup and utensils to restaurants that I would normally use plastic or paper at. I'm going to try not eating out but sometimes you can't avoid it. I do eat out with my friends every now and then, and I sometimes eat out when I don't have time to pack lunch. I am also going to try using reusable produce bags. I might also make a compost bin to put all the vegetable trash I don't feed Bella. Another way I might be more eco-friendly is buying wood items instead of plastic so they're biodegradable. Here are some materials I am planning on buying or I already own and I'm going to use:
2. Start going to the Gym, exercising more.
I'm planning on going to the gym at least once a week. I want to start going for a walk around the neighborhood with the dog every night, and using my exercise ball. My goal is to lose some weight and gain muscle to be toned.
3. Write on my blog more.
4. Spend less money on stuff I don't need.
5. Get outside more. I feel like I need to start doing more outside, like camping, hiking, swimming, going to parks, etc.

Choosing a Pet

Add up your answers as you go down to see what pet you should have! (BTW i haven't ever had a cat so this isn't that accurate)
I want to cuddle with my pet.....
  • A. I want the pet to sit on my lap and let me hold it
  • B. I do not want to cuddle my pet just hold it
  • C. I want to cuddle, hold, and snuggle with my pet
  • D. I want to pet it, and let it sit on me.
  • E. I just want to look at it
My pet is going to poop
  • A No big deal, I'll pick it up.
  • B I don't want to deal with poop very often
  • C Ok I can clean up after them.
  • D Ok I can clean up after them and teach them to only poop in a specific spot.
  • E EWWW something easy please!
Playing with your pet
  • A I can hold it and maybe throw a ball with it
  • B I can let it run all over my room while I watch it closely
  • C We can throw a ball, chase eachother, etc
  • D I can give it a toy and shake toys in it's face for it to grab at
  • E I will honestly forget to play with it.
How much room will you take up
  • A I have some space for a crate or something
  • B I have some room on my dresser for a cage
  • C He can just run around my house
  • D I have room for chewy/scratchy toys and a litter box
  • E I have like no room.
How much of a clean freak are you?
  • A I am cool with a lot of cleaning
  • B I don't want to clean too too much but I'm not against cleaning when nescessary.
  • C I can clean when I have to, and vacuuming fur up is fine.
  • D I don't want to clean every day but like sometimes is fine.
  • E I don't want a pet that will mess up my house.
If you got mostly A's: A Bunny or Guinea pig! They love to be played with but can be put away when you're done with them. They're not a beginner pet though because they need lots of care.
If you got mostly B's: A Hamster! Hamsters are super easy and love to run around for exercise. This is a good beginner pet.
If you got mostly C's: A Dog! Dogs are a big commitment, they love to play, run, and cuddle.  DOgs require training as a puppy so are more of an intermediate pet.
If you got mostly D's: A Cat! Cats require training and care but aren't as attention seeking as dogs.
If you got mostly E's: A Fish.... Yeah you don't really want a pet as much as more responsibility and something cute to look at.

Cheap and Easy Fall Inspired Day-cation!

Here I have some fun ideas for just you or you and a friend to do this fall at home! This is a full Daycation (Day-Vacation) that is cheap and easy! Comment and let me know if you do this and what you changed!

Let's have breakfast in bed! Here is an easy vegan recipe for fall

You can serve these delicious pancakes with fruit, coffee, and vegan sausages. Put a nice flower in a small vase on the tray that you surprise your friend with, make yourself a tray as well and sit and eat with him/her. You can also put on some classical music or just watch TV or a movie.

Let's get outside! Here are a few ideas for getting some fresh air.
>Go for a bike ride
>Go for a long walk
>Go find the prettiest leaves, sticks, burrs, and pine cones you can find and make a little ornament for your house.

Prep: Get some supplies:
>Paint brushes, or clean sponge pieces.
>Paper or canvases
>Any paint, watercolors can be bought at the dollar-tree, acrylics at Walmart.
>Put on a fall painting tutorial on youtube to follow along.
Experience:
Follow the video's instructions to create a beautiful piece of art.

Let's Go to the Spa! No Day-cation is complete without a nice relaxing spa after a long day of having fun!
Prep:
>Cut 2 slices of cucumber.
>Mix equal parts sugar and coconut oil to create a sugar scrub
>grab some cinnamon
>brew a small batch of green tea
>Put some water and brown sugar cinnamon bubble bath in the tub
>grab a book
>light some fall scented candles
>Pour yourself some apple cider or pumpkin spice eggnog
Experience:
Take a nice relaxing bath, exfoliate your arms and legs with some sugar scrub, sip a drink, and put green tea on your face or any other mask or treatment you like for your skin. If you're not reading sit back with some cucumber on your eyes.

What I eat as a Vegan

Whenever one of my sisters tells someone I'm vegan randomly (It doesn't even fit with the conversation) The person always says what do you eat? Usually I look at them like "for real?" and then I say I cook lots of stuff but from now on I'll just say look at my blog. Money Saving Hacks: Sub sandwich

Everyone loves a good sub sandwich but they can be a little bit pricey. Today I am sharing with you my money saving life hack to having a delicious 6 inch sub sandwich for under 3.00.
I'm not talking about subway today but I am talking about Publix Deli subs. I discovered this hack one day when I wanted a sub sandwich but I didn't want to pay full price for a sub that didn't have any meat on it, (This hack can include meat and still be under 3.00) so I decided to get the salad bar instead when it hit me to buy a hoagie roll (69 cents) from the bakery and put my salad (approx. 2.00 or less depending on how much and what you get.) on the hoagie roll. My sister also did this and she got the fried chicken that was on the salad bar. The salad bar also has pieces of ham if you prefer. I got the banana peppers, bell peppers, lettuce, and they had packets of mustard and mayo in the deli if you want or you can use salad dressing. This hack can be used at any grocery store that has a bakery and a salad bar not just Publix. (We got two drinks and two of these for $7ish.) This is helpful with saving money but has its downsides such as if you wanted sliced tomato or a slice of cheese which isn't on the salad bar.

Road Trip Ideas and Living in a Van part 2 - Essentials

I just wanted to let you guys know some things I researched because I really want to go on a road trip if I can buy a Volkswagen van sometime in the future.

Gym membership

You need a gym membership at a gym with a lot of locations and you need to plan which ones you're going to while you travel so you don't pass one and not see another one for a week. The reason you need a membership is so you can use their clean showers while you are traveling. This might sound a little weird but if you want to you can wash your container and utensils with the water there if you either want to take them inside with you or just bring a gallon of water back which sounds funny but if you have a better idea tell me in the comments. You can also use the gym's pool if they have one, you can use their water fountains if they have them, and you can exercise too.

Power

You don't want to drain the battery of your can so you need to find power elsewhere. You can charge your electronics using a battery if you know how to set that up. You can also charge them at restaurants or delis that have outlets. If your gym has an outlet you can also use that. Probably the best thing would be to figure out how to get a battery in your van and plug stuff in obviously I don't know how. Some people also use solar power but that can be very expensive.

Gas Money

You either need to save as much money as you need before you leave or you need to have jobs set up at your stops. There are farms you can work at that will give you free food, you can work online, or find temporary jobs at different stops. To save money on gas you can't have the A/C running all night so you'll have to go on this road trip in a cooler season or bring a fan that you can plug into your battery or bring a battery powered fan. If you go in winter you'll have to have a very warm blanket and warm PJs or use your heater depending on how cold it is.

You will need:
A towel
A good pair of walking shoes
A bucket for dish washing
dish soap
a sponge
a container and utensils
Food
A warm bed set
A smart phone with a GPS
Clothes
A battery (mentioned earlier)
Curtains on your van windows
Deodorant, Body wash, etc
A gallon jug
Pepper Spray (just in case)

Road Trip Ideas and Living in a Van part 1 - Food

So I've been looking into Volkswagen vans which are so cute and they're perfect for road trips. Some people actaually live in them too. What you do is have a bed in the back instead of a back seat and you basically camp in there while you travel so you're not paying anything for hotels.

What about food?

)yoIts probably not a good idea to eat out every single meal every single day while you travel because it will be very expensive or very unhealthy or both. What you should do is buy your food in bulk and make sure it's non-perishable unless you can keep it in a cooler for a day or two and eat it all. Some foods I recommend are: (🌱=healthier)
•instant noodles (you can ask for a cup of hot water from a fast food restaurant and pour it in your cup)
•Bananas, oranges, mangoes, kiwi, peaches, nectarines, avocados, and any other fruit you don't need to keep cold. (no need to refrigerate and perfectly healthy.) 🌱
​•Sandwiches (you can have a peanut butter sandwich or a tomato and avocado sandwich🌱 (just make sure to eat your tomato soon after you slice it and keep it in a cooler.) and you can also have a peanut butter banana sandwich🌱. Also a tuna fish sandwich would work if you use mayo packets.)
•Protein shakes (you can either buy a small bottle of milk each time you want one or use water) 🌱
​•instant Oatmeal (just find a gas station with a microwave then make as normal)🌱
•Nuts🌱
•Jerky
•Dried fruits🌱
•You can even buy dehydrated meals and just add hot water, I've tried stroganoff before it's not bad.
•Canned goods (again just heat up at a gas station)

You should definitely bring yourself a container to be a bowl/plate and utensils. You don't want to eat out of a can.
